Weekly Recipe: Quiche with a Sweet Potato Crust
Ok, yesterday morning Sami woke up early and by the time I came downstairs the house smelled like the breakfast of my dreams and she said, “Babe, I’m doing something fun!”
AND IT WAS DELISH!
So here is Sami’s “quiche with a sweet potato crust” recipe!
Sweet Potato Crust:
- shred sweet potatoes
- ring out juices with a towel (get that crisp — no soggy city baby)
- add diced onions
- add spices
- paprika, salt, pepper, garlic salt, a little oil — spread equally.
- spread sweet potatoes thinly in a baking pan
+ Bake on 400 for 30min = crispy crust goodness
Eggs:
- While crust is cookin mix those eggs baby…
- 4 eggs (or more if you want it thick)
- Broccolini
- 1 bacon slice
- 4 cloves of garlic
- Add spices: salt, lots of pepper, oregano, onion salt etc and mix!
Secret Tip:
- Add 5 thinly cut butter slices on sweet potato crust before dumping eggs for a little extra yum.
Dump onto sweet potato crust when crust is done and bake for 45-1hr depending on thickness
