Weekly Recipe: Blue Cornbread

So my bestie, Paul, found some blue cornmeal and we were trying to figure out what to do with it and so we decided to make blue cornbread and it was delicious! 

What you need:

  • 1 cup buttermilk (regular milk or oat milk could also work)

  • 1/4 cup butter, melted

  • 2 eggs

  • 1 1/4 cup blue corn meal

  • 1 cup flour

  • 1/3 cup sugar

  • 1 T baking powder

  • 1/2 tsp salt

What to do:

  • Preheat oven to 400 F

  • Stir together buttermilk, butter, and eggs until combined.

  • Stir in cornmeal, sugar, baking powder and salt until uniform.  

  • Gently stir in flour until just combined (it's ok if it's a little lumpy.)

  • Pour batter into skillet and bake for 22-28 minutes.  You want it to be cooked through and very lightly browned.

  • Enjoy! (We had ours with a bowl for chili and it was perfection)
