Weekly Recipe: “Healthy Soup”
Alright, so back in the olden days (2019), Sami and I were traveling non stop and after every trip, we would come home and make what we call, “healthy soup.” This is a soup that we believed if we ate it— we wouldn’t get sick. Well, fast forward and we are not on a plane every week but we do still love this soup!
So here it is: “healthy soup”
What you need:
Chicken breast (optional)
Chicken bone broth
Carrots
Onion
Garlic
Turmeric
Curry powder
Salt
Pepper
What to do:
Boil and shred chicken breast and set aside
In a new pot: add a little oil of yours choice and sauté the onion, garlic and carrots for a few minutes
Add the chicken, and a crap ton of turmeric and curry powder (probably 2tbsps of turmeric and 4 tbsps of curry powder)
Then add the bone broth - no measurements here just add as much as you like until the soup has your preferred soup texture
Let simmer for around 10min then add salt and pepper to taste
Simmer some more until you’re ready to eat!
