Weekly Recipe: French Bread
Most of you know how obsessed I am with bread (who isn't?!) and most of the time, especially these days when I can be home more throughout the day, I am making sourdough bread. It may come as a surprise to find out that I actually got my start by making a bit more simple (also, so delicious) french loaves. So I want to share that recipe with you all in the event that you are looking for an accessible entry point into the bread scene!
What You Need:
2 1/4 tsp active dry yeast
1 tsp sugar
1 1/4 cup warm water (100ish degrees)
1 1/2 tsp kosher salt
2 1/2 cups flour
What To Do:
mix hot water, yeast and sugar
Let proof for 5min (until it looks foamy)
Add salt
Slowly add flour until all the flour is in and dough is mixed well
Cover with a towel and sit for 1hr
MAGIC HAPPENS
Carefully tilt the dough out of the bowl onto a floured surface
Fold the edges of the dough up from the bottom to the top like a diaper... do this a few times until you have seams at the top
Get a little bit smaller bowl, flour it and put the dough seam side down into the bowl and cover with a towel for 30min
While that’s happening... turn on your oven to 460... put the empty Dutch oven, with the lid on in the oven
About 30min later, the dough is ready and the oven is preheated, take out the hot Dutch oven and carefully put the dough (seam side up) into the pot.
Put it in the oven and bake for about 25-30min with the lid on and 5-10 with the lid off for a good crust! (Or however long you want until it's the color you like…)
