Weekly Recipe: Homemade Tortillas

So, this recipe makes about 8 tortillas, if you want more just double it!

Here's what you will need

  • 1.5 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking powder

  • 3 tablespoons vegetable oil, canola oil, or shortening (anything with high fat)

  • 1/2 cup hot water

For christmas last year, my brother in law got me a stand mixer and it is the best! If you have one, this first part is for you! If you don't have one, you can do it by hand too - just skip the next few lines!

  1. In your mixer bowl, with the dough hook, add the flour, salt, and baking powder and give it a quick mix

  2. Keep the mixer about medium speed and add the oil and water. Mix it for like 2 minutes and be happy that the mixer is doing all of your work. You may need to stop once or twice to scrape the sides of the bowl and make sure it's all getting in the mix. 

  3. After the dough starts to make a ball, put that mixer on low and let it go for another few minutes until that dough is smooth like a baby. 

Doing it by hand? This is for you!

  1. Grab a bowl and mix the flour, salt, and baking powder together. 

  2. Now, add your vegetable oil. Stir it until you have something like crumbs.

  3. Pour in the warm water and stir it up. 

  4. Throw some flour on your hands and knead that dough until you get a nice happy ball of dough.

Ok, now my mixer people and my ‘do it by hand’ friends unite… this next part is for all of us

  1. Now, put that baby ball of dough onto a floured surface and divide it up into 8 pieces (try your best to make them equal but half the fun of homemade tortillas is that they are all different sizes!) 

  2. Roll the eight pieces into little balls and take the palm of your hand and just flatten them down a bit until they look like fluffy hockey pucks. Cover those hockey pucks with a kitchen towel and let them rest for at least 15 minutes and up to an hour. (they've had a long day and need their rest) 

  3. When ready to cook, heat up a large cast-iron or heavy-bottomed skillet over medium-high heat.

  4. No, grab a rolling pin or wine bottle or whatever you have and roll each dough ball into a circle (or as close as you can)

  5. One at a time, cook the tortillas on the hot skillet for about 30seconds each side (or until you feel like they are done) 

  6. Now, put whatever you want inside and enjoy!

  7. If you don’t eat them all right away, you can put them in a ziplock and keep them in your fridge for a few days but because they are fresh - they won't last very long so i suggest eating them!
