Weekly Recipe: Steak Bowls

Ok, so two weeks ago, I shared my steak taco marinade with you all and today, I want to share an alternative use for it! If for some reason you aren’t feeling like tacos, you can use that same marinade to make one of Sami’s all time favorite meals: Steak Bowls

What is a steak bowl you ask? Well, it's something that we made up the first time we did Whole30 (because you can’t have tortillas) and this random meal became a staple in our house. 

Ok, so steak bowls consist of: 

  • Cauliflower rice cooked with the juice of one whole lime and a handful of cilantro

  • Sweet potatoes diced, seasoned with salt, pepper, cumin, paprika and tossed in olive oil then roasted for about 25min at 450 degrees. 

Now, here's the fun part, once you have your steak, sweet potatoes and cauliflower rice - you build your bowl and add your favorite toppings! It's like a super healthy DIY chipotle in your house. 

My favorite toppings: romaine lettuce, red onion, and jalapenos.

Sami’s favorite toppings: romaine lettuce, red onion and pickled carrots— she puts these on EVERYTHING (see this previous post for recipe).

So there you have it, steak bowls! I hope these little delicious bowls bring you as much joy as they bring us!
