Weekly Recipe: Pizza Sauce

This week’s recipe is dedicated to our besties, Paul and Marx. Not only are they two of our best friends, but Paul happens to be a sourdough king and one of the best things he makes is sourdough pizza crust (no, that’s not what the recipe is today, sorry) but his pizza is so fantastic and every Friday since quarantine, we have pizza night with them and it's the best. Well, this week, the garden in our backyard gave us sooo many tomatoes and we decided to use them to make homemade pizza sauce for our pizza night. 

Full disclosure, this is my first time ever making this up so there is definite room for improvement and also room to add your own spin on it despite it being the first, it was pretty good!

Ok, here's what you need:

  •  2 tablespoons extra virgin olive oil

  • 4 minced garlic cloves

  • 5 cups of fresh tomatoes, seeded and cubed

  • 1/2 teaspoon salt

  • 5 fresh basil leaves

  • 1/2 teaspoon dried oregano

  • ½ teaspoon chilli flakes (if you want a little spice in your life)

  • pinch of sugar

What to do:

  • In a pot, heat the olive oil to medium low

  • Saute garlic gently for 3 or 4 minutes (you don't need it crispy, just soft)

  • Toss in your tomatoes, salt, basil, chili flakes and oregano and simmer slowly for 30 minutes. (the longer, the better)

  • Add a baby pinch of sugar halfway through cooking, to taste.

  • Taste, taste, taste and add more of anything you want until it feels just right!

  • Use a hand blender to mix or pour it into your blender and mix mix mix

  • Toss it on your favorite pizza crust and make some magic happen!
