Weekly Recipe: Stuffed Sweet Potatoes

While you take a little break from the internet, maybe consider making a meal that takes longer than you usually spend on cooking. It may just be me, but cooking is so essential for my mental health because it keeps my hands busy, keeps me off my phone, and makes me feel connected to something beyond myself. So this week's long recipe is… stuffed sweet potatoes!

What you need:

  • Chicken thighs (this is what I like to use)

  • Salt, pepper, garlic salt, paprika, cumin, lime, olive oil 

  • Sweet potato

  • Avocados 

  • Red onion 

  • Cilantro 

What to do:

  • first, marinade the chicken with equal parts of all the spices listed above

  • Bake your sweet potato until fork tender

  • Grill or roast the chicken until it’s cooked to perfection 

  • While the chicken rests and the potato cools - whip up a nice little guac with the avo, lime, garlic salt, red onion

  • Now chop your chicken 

  • Ok it’s time to assemble! 

  • Cut the sweet potato in half long ways and break up the inside a bit - sprinkle with salt and pepper if you want - then add the chicken, add the guac, top with cilantro and enjoy!
