Weekly Recipe: “What’s Left in the Fridge Frittata”

This week we were down to the bare minimum in the fridge, but we did have a ton of eggs for some reason. So I decided to make one of my favs: a lazy frittata. 

You can always make a fancy frittata that bakes in the oven and it is so pretty with planned out ingredients but this frittata is made on the stove top and can have anything you want in it!

Here's what I had in my kitchen:

  • Potatoes

  • Trader Joe’s Soy-rizo

  • Eggs 

  • Onions and Garlic

Here’s what would also be delicious to add if you have it:

  • Cheese

  • Sweet potato

  • Any kind of meat

Ok, so here's what you need to do. 

  1. If you're using potatoes, sauté a little onion and garlic in olive oil the pan first (always adds a great layer of flavor)

  2. Add your potatoes (any kind) and throw in a little salt and pepper

  3. Cook potatoes until they are starting to get soft 

  4. Add whatever meat you are using and mix it all up 

  5. In a separate bowl, whisk up however many eggs you think will cover the ingredients in your pan (this is not an exact science lol)

  6. *if you have any cheese, mix it up with your eggs!

  7. Pour eggs over everything and throw a lid on the pan

  8. Every few minutes, run a rubber spatula around the sides of your pan to prevent sticking

  9. Once the eggs are cooked - you are ready to eat! Throw on any toppings you’d like (sriracha, sour cream, pickled carrots, onions, etc.)
